Cocoa

The cocoas that our associates grow are: wild native cocoas, aromatic cocoas (Trinidadian) of high quality, produced under an agroforestry system with an adequate post-harvest process, 100% of the production of our associates is collected fresh to be fermented, dried and stored centrally, in our implemented benefit where we control the quality of the bean in slime, types of cocoa, and its traceability.

During the benefit process, we monitor Brix degrees, acidity, temperatures, fermentation percentage and moisture content. Drying is carried out in exclusive environments in a controlled manner; Finally, each batch is evaluated and classified according to the degree of fermentation and type of cocoa. Those cocoas oriented for specialty markets are rigorously processed and evaluated in our quality control laboratory by trained personnel.
